How do a choose the best GPU for parellel processing in R and PhotoScan?

I'm currently working on building a new workstation to speed up the processing of data in R (using large data sets for boosted regression trees) and speeding up DEM and Mesh building in Agisoft PhotoScan. Both packages are capable of OpenCL GPGPU processing.
My question is: how do I choose the best GPU for this task? I think we will going the AMD route, and I see a lot of similar builds using the HD7970.  But what is it about the GPU that makes it good for GPGPU processing? And how do I know if I can run the processing on two GPUs?
I'm not a computer scientists by any stretch of the imagination so please excuse me if i have used any terminology incorrectly. Any guidance is much appreciated.
