Antioxidant and Fibrinolytic Activities of Extracts from Soybean and Chungkukjang (Fermented Soybean Paste)

To develop natural preservatives or functional health foods from soybeans (Baektae and Taekwang), the antioxidant and fibrinoytic activities of the water and 70% (v/v) ethanol extract of soybeans and fermented soybean paste (Chungkukjang) were examined. The polyphenol contents of water extracts from Baektae and Baektae Chungkukjang were 189.25 mg/100 g and 814.58 mg/100 g, respectively, whereas those from Taekwang and Taekwang Chungkukjang were 210.23 mg/100 g and 834.23 mg/100 g. The polyphenol contents of the water extracts from Chungkukjang was 4.0~4.3-fold higher than those from soybean. The electron-donating abilities (EDAs) and superoxide dismutase-(SOD)-like activities of the water and ethanol extracts from Chungkukjang were higher than those of the extracts from soybean. Both extracts were found to have had fibrinolytic activity, and the highest activity was present in the water extracts of Baektae Chungkukjang. The polyphenol contents and antioxidative and fibrinolytic activities of the extracts from Chungkukjang were higher than those of the other soybean extracts. These results indicate that Chungkukjang can be used as a material for health foods or natural antioxidants.


Antioxidative and Fibrinolytic Activities of Several Medicinal Plant Extracts

Objectives : This study was conducted to evaluate the antioxidative and fibrinolytic activity of the water and ethanol extracts from medicinal plants. Methods : Five kinds of medicinal plants(Carthami Flos, Glycyrrhizae Radix, Schisandrae Fructus, Atractylodes Rhizoma, Shiitake mushiroom) were extracted with distilled water and 70% ethanol, and the extracts were tested for their antioxidative and fibrilytic activities. Results : The highest polyphenol contents of the water and ethanol extracts from medicinal plants were 812.52 mg and 685.44 mg per 100 g of Carthamus tinctorius and Schizandra chinensis, respectively. The electron donating abilities (EDA) of the water extracts from all medicinal plants except Lentinus edodes were about 90% at 1,000 ppm and ethanol extracts were higher than those of water extracts. The highest SOD-like activity and nitrite scavenging abilities (NSA) were both of water and ethanol extracts from Schizandra chinensis. Five kinds of medicinal plants had fibrinolytoc activity and the highest activities were water and ethanol extracts from Glycyrrhiza uralensis. Conclusion : These results suggest that the medicinal plants can be used as natural antioxidant to prevent oxidative damage in normal cells probably because of their antioxidative and fibrinolytic activities.


Antioxidative Activities of Syneilesis palmata Extracts

This study was conducted to examine the antioxidant activities of the extracts from aerial parts and roots of Syneilesis palmata. The ethanol extract of aerial parts showed the highest content of flavonoid compounds (31.72 mg/g), and the ethanol extract of roots has the highest content of total polyphenol compounds (68.11 mg/g). The water extract of S. palmata roots showed the highest xanthine oxidase inhibition of 99.29% and the ethanol extract of aerial parts showed 98.48% at 1.0 mg/mL. The ethanol extract of roots showed the highest value of nitrite scavenging ability of 70.89% at pH 1.2, SOD-like activity of 13.06% and electron donating ability of 98.58% at 1.0 mg/mL concentration. The effect of tyrosinase inhibition was found at only the ethanol extracts of roots (9.33%). We found that root extracts contain abundance polyphenol compounds and their antioxidant activities were greater than those of the extracts of aerial part.

The purpose of this study was to measure flavonoid and polyphenol contents, and physiological activities of various extracts from Vitex rotundifolia seeds (known as Man Hyung Ja). We obtained three extracts using water (WE), ethanol (EE) and hot water (HWE). The EE sample had the highest flavonoid content of 31.05 mg/g. Polyphenol contents of WE and HWE were 186.69 mg/g and 182.55 mg/g, respectively. HWE had the highest superoxide dismutase (SOD)-like activity, at 83.40%. The electron donating abilities (EDA) were at the concentration of 1.0 mg/mL, and all of extracts showed more than 88% EDA even at a concentration of 0.1 mg/mL. The inhibitory rates of xanthine oxidase were when 1.0 mg/mL extracts were used, and all extracts showed more than 90% inhibition at 0.5 mg/mL. The nitrite scavenging abilities were at pH 1.2 and 1.0 mg/mL extract concentration; these abilities decreased as pH increased. Tyrosinase inhibition activities of HWE and WE were 48.58% and 46.67%, respectively. These results indicate that Vitex rotundifolia seeds extract might be an effective antioxidative activity.


Physiological Activities of Korean and Chinese Viola mandshurica Extracts

This study was carried out to compare the physiological activities of the extracts from Korean and Chinese Viola mandshurica W. Baker. The water extract from leaves of Chinese V. mandshurica exhibited the highest extraction yields of 30.45 g/100 g and the highest content of total flavonoids as 102.30 mg/g. Also, its ethanol extract showed the best content of polyphenol compounds as 136.16 mg/g. The leaf extract of Korean V. mandshurica produced higher electron donating abilities (EDA) of 92.69% (KLW) and 93.61% (KLE) than the other fractions. The strongest SOD-like activity was shown in the ethanol extract from Korean leaves of 17.28% at the concentration of 1.0 mg/mL. The nitrite scavenging abilities (NSA) of the leaf extracts of V. mandshurica from China were intense over 50% at pH 1.2 and 3.0. In the results of inhibitory rates of xanthine oxidase (XO), both ethanol extracts from Korean and Chinese leaves were higher than the other fractions as 98.67% and 93.80% respectively. Effect of tyrosinase inhibition was the highest in the water extract (45.04%) of Chinese leaves, followed by its ethanol extract (31.36%). The results of EDA, SOD-like activity and XO inhibition of the leaf extracts from Korean V. mandshurica were higher than those of Chinese, on the other hand, determinations on total polyphenol contents, NSA and tyrosinase inhibition were higher in those of Chinese.


Analysis on the Components of the Vitex rotundifolia Fruit and Stem

This study was conducted to analyze components of the fruit and stem of Vitex rotundifolia as part of a study on the nutritional and functional materials, and the development of a functional food. General components of V. rotundifolia fruit are moisture 12.92%, carbohydrate 78.67%, crude protein 3.22%, crude fat 1.73% and 3.46% crude ash. V. rotundifolia stem was moisture 11.30%, carbohydrate 80.87%, crude protein 4.78%, crude fat 0.64 % and 2.41% crude ash. The content of V. rotundifolia reducing sugar was 646.07 mg% (fruit) and 1,547.97 mg% (stem). The total amount of free sugar was fruit 5.66 mg% and stem 90.79 mg%. The content of soluble protein was 3,268.12 mg% in fruit and 4,927.55 mg% in stem. The polyphenol compound content was 608.06 mg% and 808.06 mg%, respectively. Total amount of hydrolyzed amino acid of V. rotundifolia fruit and stem were 3,095.75 mg% and 2,135.84 mg%, while that of free amino acid of fruit and stem were 79.99 mg%, 81.20 mg%, among which cysteine (2,010.82 mg%) was the highest in the V. rotundifolia fruit. In the results of mineral analysis, the content of K was the highest in fruit (2,184.00 mg%) and stem (1,469.20 mg%).


Antioxidative Activities and Tyrosinase Inhibition of Water Extracts from Ailanthus altissima

Water extracts from root, stem and leaf of Ailanthus altissima were utilized to determine antioxidant properties such as electron donating ability (EDA), nitrite scavenging ability, superoxide dismutase (SOD)-like activity, and the inhibitory activities of xanthine oxidase (XO) and tyrosinase. The EDA of root extract was the highest as 77.33% at 0.5 mg/mL concentration and that of stem extract was 70.01% at 1.0 mg/ mL. The nitrite scavenging ability of leaf extract revealed the highest effect as 95.18% at pH 1.2, 1.0 mg/mL while those of stem and root extracts were 55.17% and 33.33%, respectively. The leaf extract showed the highest SOD like activity as 26.77% at 1.0 mg/mL, the measurement of root extract was 3.82% and that of stem extract was not effective. All kinds of extracts had strong inhibitory activities on XO of over 92% at 1.0 mg/mL. The highest activity on tyrosinase inhibition was obtained from leaf extract of 16.33% at 2.0 mg/mL. The results indicated that among the three extracts, the leaf extract has a strong and extensive antioxidant activity.


Polyphenol Compound Contents and Physiological Activities in Various Extracts of the Vitex rotundifolia Stems

For this study, extracts of Vitex rotundifolia stems were prepared using reflux water extraction (WE), reflux ethanol extraction (EE) and hot water extract under high pressure (HWE). The extracts were investigated for the total content of phenolic compounds, antioxidant activities, and inhibitory potencies for xanthine oxidase and tyrosinase. The EE extraction method yielded the highest content of polyphenol compounds (176.34 mg/g). The electron donating abilities (EDA) were 93.4696.92%, when extracts were assayed at 1.0 mg/mL. The superoxide dismutase (SOD)-like activity was the highest in the WE extract (47.32% at 1.0 mg/mL). The nitrite scavenging abilities (pH 1.2) were 84.6188.36% and the inhibition of xanthine oxidase were over 90% at 0.5 mg/mL. Tyrosinase inhibition of HWE and WE were 57.84% and 53.47% respectively. It implies that V. rotundifolia stems have potent physiological activities and their activities were differently exhibited depending on solvent fractions.

This study analyzed the contents of vitamin C, polyphenol compounds, and evaluated the inhibitory activities against xanthine oxidase and tyrosinase of Lepista nuda extract prepared by the reflux and microwave-assisted methods. Soil Properties of the Habitat of Lepista nuda

This study was carried out to analyze the soil properties of Lepista nuda habitats to form a part of the studies on the characteristics of L. nuda. The soil samples collected from seven studied areas were investigated for soil properties such as soil moisture, soil pH, and the contents of organic and inorganic matters. The content of soil moisture was 29.7% and the content of organic matter was 32.1%. Total nitrogen was 0.74% and soil pH was 4.75, which was ranged from 3.6 to 5.20. In the content of inorganic matter, the content of Fe was highest as 1,024 ppm, K 183 ppm, Mn 21.9 ppm, Ca 2.02 ppm, Zn 1.46 ppm and Mg was lowest as 0.51 ppm.
