ABSTRACT

This paper describes a technical process to make unrefined brown sugar from sugarcane juice maintaining the characteristics of the traditional process with the purpose of keeping the identity of the product, considering it a natural food with minimum processing. A semi-continuous process has been developed to make unrefined sugar, keeping its original quality and characteristics for human consumption. The process consists of three stages: extraction of juice from sugarcane, a juice clearing and concentration stage, and the molding of “piloncillo” blocks/cones. The hardness of “piloncillo” is one of the most important characteristics since it rates the quality of the product, and it is directly linked to the concentration of Direct Reducing Sugars (ARD) during the process. Applying very high temperatures for long periods of time may result in a significant increase of ARD concentration.     ABSTRACT: The experiment was conducted during 2011 to investigate the effects of organic fertilization on yield and nutrient content of two saladette tomato genotypes grown in five media: S1 = sand + inorganic nutrient solution; S2 = sand + vermicompost tea; S3 = mixture of sand: compost (ratio 1:1; v/v) + vermicompost tea; S4 = mixture of sand: vermicompost (ratio 1:1; v/v) + vermicompost tea and S5 = mixture of sand: compost: vermicompost (ratio 2:1:1; v/v) + vermicompost tea. The best four combinations were El Cid × S2, El Cid × S4, Cuauhtémoc × S2 and Cuauhtémoc × S5, which reached an average yield of 172.4 Mg ha1, the combination El Cid × S2 had the highest yield, wich was 184.7 Mg ha-1of fruit. In the El Cid × S2 and Cuauhtémoc × S2 combination were obtained medium sized fruit, while the El Cid × S3 and Cuauhtémoc × S3 combination were obtained fruits with concentrations greater than 4.6 °Bx. The Zn content was increased in the fruit harvested under organic substrates, while the Mn content was reduced in them. The genotype Cuauhtémoc grown in S2 recorded the higher values in N, P and Zn contents. The proposed treatments based on organic substrates without inorganic solution are viable alternative, because the fruit quality is maintained and the organic products improve the production cost-benefits.
