The purpose of the study is to reveal the aspects of food self-sufficiency and the state of development of the meat products market of the Russian Federation. Objectives of the study . To analyze the current state of the development of the market for meat products and its influence on food self-sufficiency of the Russian Federation. Methods . In the course of the study, the following methods were used: methods of theoretical generalization and comparison, analysis and synthesis, methods of multivariate statistical analysis (for studying the state of the market of information and communication technologies in Russia).
The color, lipid oxidation, heme iron (HI) and non-heme iron (NHI) contents, metmyoglobin content and Soret band of myoglobin of ground pork subjected to supercritical CO2 treatment under different conditions, or to heat treatment (40°C, 2 h) and subsequent storage at 4°C were evaluated during 9-day period. Supercritical CO2 treatment significantly increased CIE L* and CIE b* values of ground pork during subsequent storage, while the HI content was slightly affected. In general, CIE a* value and metmyoglobin content were decreased. Supercritical CO2 treatment for 2 h could increase the thiobarbituric acid-reactive substances (TBARS) value, while treatment for 1 h or less had no effect. The NHI content could be increased only after treatment at above 40°C or 17.2 MPa for 2 h. The Soret band of myoglobin was shifted to longer wavelength. Increasing treatment temperature from 35°C to 45°C could increase CIE L*, CIE a*, CIE b* and TBARS values, HI and NHI contents of the ground pork, while decreasing metmyoglobin content. As the treatment pressure increased from 13.8 MPa to 20.7 MPa, CIE b* and TBARS values were decreased, while the NHI and metmyoglobin contents were increased. However, the other parameters were unchanged. Extending exposure time from 0.5 h to 2 h could increase CIE L*, CIE b* and TBARS values, HI contents, while decreasing CIE a* value and metmyoglobin content. Correlation analysis showed that the TBARS value was significantly and negatively correlated with the HI content or metmyoglobin content in samples treated at 40°C or above for 2 h.
Global trends in food provision indicate the consumption of meat is increasing. The world’s population will reach 9.8 billion people by 2050, this leads to the predominance and growth of livestock rates over crop production in developed countries, where livestock products account for up to 60% of the gross agricultural product, as a result, that will facilitate the environment and climate change. Developing an alternative protein becomes the only remedy, since traditional production is unable to meet the growing demand for meat as almost 70% of total agricultural land is already occupied by traditional farming. Accounted facts prove the necessity in innovative development of meat industry in BRICS countries. The analysis of meat consumption in BRICS countries in 1995-2020 was carried out. It is determined over the past twenty-five years, the average per capita consumption of meat has increased by 1.8 times, while 25% of the world’s population lives in the studied countries. The negative impact of livestock breeding on the environment was revealed, explained by the high consumption of water and land resources as well as methane emissions into the atmosphere. BRICS meat industry innovative development based on alternative protein is argued and proven.
The article provides a comparative analysis of the regions of the Volga Federal District, Russia to identify the dependence of industrial development on the environment. The research collected statistical information for all regions of the district and used it as a basis for constructing a perception map showing the actual regional situations compared to the “ideal point”.

The article is concerned with the international food safety from the point of view of steady human provision with food commodities. The article reveals the trend of food safety decline in the world, based on the analysis of the world exports / imports of agricultural crops and livestock products. The tasks for mitigation of the world food security are determined, the main one of which is the creation of small family farms. It is revealed, that the meat industry of Muslim countries is attractive, which is due to the high effective demand of the population in these countries.
The paper examines the impact of the embargo and sanctions on the agri-food markets in Russia. The analysis has shown that markets of milk and beef are experiencing serious problems. One of the main reasons for market volatility is a relatively low share of large enterprises with better adaptability in conditions of the embargo and sanctions and underdeveloped market infrastructure. The method that allows to quantify the consequences of the embargo and sanctions impact for the commodity markets is developed on the basis of a partial equilibrium model. The method has been tested on the meat markets (beef, pork, poultry). The estimates of changes in foreign trade, prices of producers and consumers, the dynamics of production, losses of budget, producers and consumers are provided. The results show that the budget suffers losses in all cases, and the markets with higher dependence on imports under the impact of the embargo and sanctions lose more in the welfare than those with less dependence. Poultry market has shown good stability and welfare under the embargo and sanctions due to high competition, mainly among large enterprises.
