Why don’t some cuisines travel? Charting palm oil’s journey from West African staple to Malayan chemical

Abstract

This study uses food as a lens to examine three historical phenomena: globalization’s limits, the rise of plantation-centric monocultures, and the resilience of social norms within migrant societies. The article scrutinizes the West African oil palm’s initial journey to, and reception within, the Malay Peninsula, one of the world’s largest exporters of palm oil by the end of the twentieth century. The article pays special attention to changes in the crop’s perceived food value during the interwar years, a facet overlooked by earlier scholarship. Five different migrant groups in Malaya – planter households, Asian cooks, colonial officials, government chemists, and estate labourers – played critical roles in transforming palm oil into a crop purely for industrial purposes, rather than subsistence. The peculiarities of Malaya’s social context are further sharpened by comparisons with Latin America and West Africa, where different clusters of migrants propagated the oil palm’s subsistence cultures, instead of shunning them.

If the long-term economic fundamentals behind tropical agricultural production generally favor small-scale family-run farms, why have oil palms in Southeast Asia been dominated by large-scale farming arrangements since their introduction? This article explores various reasons for the anomaly through evidence drawn largely from recently unearthed archival material in Johor, Peninsular Malaysia's southernmost state. Historians have usually stressed post–harvest coordination challenges stemming from a combination of quality requirements, processing cost economies, and crop-specific time sensitivity. On balance, evidence suggests that crop coordination challenges were the chief obstacle to Malayan smallholder involvement in oil palms before the 1950s. Unlike for estates, however, coordination problems for smallholders were more likely underwritten by the draw of competing crops, labor demands, and subsistence cultures. Given these challenges, local dealer participation was critical to fostering workable smallholder oil palm initiatives.

This paper examines the long-term development of palm oil landscapes in the northeastern Brazilian state of Bahia. In contrast to the agroindustrial monocultures that dominate global production, palm oil in Bahia emerges from a biodiverse cultural landscape constructed through five centuries of transatlantic socioecological exchange. Native to West Africa, African oil palms (Elaeis guineensis Jacq.) diffused to the New World during colonial overseas expansion, becoming established in Bahia by the seventeenth century. There the palms helped form a complex cultural landscape that continues to supply local alimentary and spiritual demands for palm oil—an essential resource in many Afro-Brazilian cultural expressions. Extending approximately 70 km south of the capital Salvador, Bahia's traditional palm oil landscapes are now officially dubbed the Dendê Coast (Costa do Dendê), following the Kimbundu Bantu-inspired Afro-Brazilian term for palm oil. Historically colonial officials and elite Brazilians showed little interest in Bahia's palm oil economy, effectively conceding it to Afro-descendants until the mid-twentieth century. Since then, a series of modern development interventions have sought to transform the complex, biodiverse landscapes of the Dendê Coast into a legible oil palm monoculture based on an improved hybrid variety. Yet despite recurrent top-down efforts, emergent or “subspontaneous” groves and traditional polycultural landscapes continue to dominate land use in the region. Drawing on ethnography, landscape interpretations, archives, and geospatial analysis, this paper analyzes the historical development of Bahia's palm oil economy, recounting five centuries of socioecological changes on the Dendê Coast. The study integrates recent geographical treatments of the African diaspora with theories of complexity to comprehend the ongoing proliferation of Bahia's traditional palm oil landscapes despite top-down promotion of modern monocultures.

Environmental histories of the African diaspora challenge Eurocentric interpretations of the Columbian Exchange by identifying African antecedents in New World landscapes and cultures. This paper joins that effort by tracing the formation of African oil palm (Elaeis guineensis Jacq.) landscapes in Bahia, Brazil. Long essential in many West African societies, the African oil palm and its products diffused to Bahia early in the colonial period. Palm oil became an integral component of Afro-Brazilian culture and cuisine, and the palm groves that yield the oil represent an Afro-Brazilian landscape. Although the palm's West African origins are well known, and despite its importance in local cultures and global economies, studies of Bahia's African oil palm landscapes remain rare and generally ahistorical. This paper marshals evidence from colonial archives, traveller's accounts, ethnographies, fieldwork and digital geographic data to analyse the formation of Bahia's Dendê Coast (Costa do Dendê, or Palm Oil Coast). While Africans and Afro-Brazilians emerge as principal actors, the analysis places humans within a broader socioecological framework to demonstrate how historical processes, geographies, agroecologies and human agency all coalesced to establish and sustain Bahia's Afro-Brazilian landscape.

A key theme in the West African trading system of the nineteenth century is the transition from the slave trade to 'legitimate' commerce, and its significance for the African societies of the region. In this period of transition, trade in palm oil was at the core of relations between Britain and West Africa, and of immense importance to the economies of large parts of West Africa. Martin Lynn's authoritative and comprehensive study of the palm oil trade covers the whole of this critical period for all of West Africa. It explains how the palm oil trade grew organically out of the organisation of the slave trade. The situation changed sharply with the development of steam communication between Britain and West Africa from the 1850s, leading to severe problems for the commerce in the second half of the century, the erosion of African brokers' powers, and the restructuring of the trade thereafter. The result was a crisis within the trade towards the end of the century and, eventually, with the arrival of colonial rule, the ending of the long established structures of the commerce.

Planting Empire, Cultivating Subjects examines the stories of ordinary people to explore the internal workings of colonial rule. Chinese, Indians, and Malays learned about being British through the plantations, towns, schools, and newspapers of a modernizing colony. Yet they got mixed messages from the harsh, racial hierarchies of sugar and rubber estates and cosmopolitan urban societies. Empire meant mobility, fluidity, and hybridity, as well as the enactment of racial privilege and rigid ethnic differences. Using sources ranging from administrative files, court transcripts and oral interviews to periodicals and material culture, Professor Lees explores the nature and development of colonial governance, and the ways in which Malayan residents experienced British rule in towns and plantations. This is an innovative study demonstrating how empire brought with it both oppression and economic opportunity, shedding new light on the shifting nature of colonial subjecthood and identity, as well as the memory and afterlife of empire. Proposes a more complex view of colonialism that takes into account shared sovereignties, multi-ethnic populations, and widely different styles of governance. Situates the history of British Malaya in its global context, recognizing its importance to the Indian Ocean and the Southern Pacific areas, as well as the world economy. Demonstrates the impact of British rule on ordinary people as they migrated long distances into a frontier area.

Presenting a social history of colonial food practices in India, Malaysia and Singapore, this book discusses the contribution that Asian domestic servants made towards the development of this cuisine between 1858 and 1963. Domestic cookbooks, household management manuals, memoirs, diaries and travelogues are used to investigate the culinary practices in the colonial household, as well as in clubs, hill stations, hotels and restaurants.
