Abstract and Figures

The current scientific research is focused on the Lucuma powder. We were determined the moisture equilibrium data (adsorption and desorption) at three different temperatures: 10°C, 25°C and 40°C and relative humidity from 0.11 to 0.90, using the static gravimetric method of saturated salt solution. The results showed that the sorption capacity decreased when the temperature increases in the conditions of constant water activity. We were used four different mathematical models – modified Chung–Pfost, modified Oswin, modified Halsey and modified Henderson for description of isotherms of Lucuma powder. According to obtained experimental data, we were recommended the modified Halsey model for description satisfactorily the sorption isotherms of powder.

This study explored the use of lucuma fruit powder in an ice cream formulation for the US market. Six ice cream prototypes were developed using five different lucuma fruit powder variants. A central location test was conducted with frequent ice cream consumers (n = 106) to assess acceptance, attribute intensity rating, ideal intensity levels, and purchase intent against a control sample with caramel flavor. The mean overall liking score for all lucuma ice creams was moderate. The overall, aroma, and flavor liking scores were significantly higher (p < 0.05) for lucuma ice cream samples, whereas the control sample was liked significantly more for texture. The Terrasoul variant of lucuma ice cream was the most liked among all samples, and the control was liked the least. Only the Terrasoul ice cream sample was successful in delivering significantly strong caramel, fruit, and sweet flavor levels; the other lucuma ice cream samples were more comparable to the control. The inclusion of lucuma powder increased powdery mouthfeel perception, negatively impacting texture liking. Consumers perceived all ice cream samples to be weak in flavor and fell short of delivering ideal levels. The US consumers had low–moderate food neophobia scores for lucuma fruit, with 57% showing interest in buying lucuma ice creams.

Nghiên cứu nhằm tối ưu hóa tỷ lệ nguyên liệu và nhiệt độ nướng bánh quy có bổ sung lêkima được thực hiện theo phương pháp bề mặt đáp ứng (RSM) để tạo ra sản phẩm đạt cấu trúc và màu sắc tốt nhất. Mô hình phức hợp trung tâm (CCD) đã được sử dụng để khảo sát ảnh hưởng của tỷ lệ nguyên liệu (thịt quả lêkima 25 – 35%, trứng 14 – 18%, bột nở 1,0 – 1,2% tính theo khối lượng bột mì) và nhiệt độ nướng (140 – 160oC) đến chất lượng sản phẩm. Ảnh hưởng của 4 loại bao bì gồm polyamide (PA), polyethylene (PE), polypropylene (PP) và oriented polyproplene (OPP) đến mật độ vi sinh, độ cứng, độ ẩm, màu sắc và chất lượng cảm quan sản phẩm cũng được khảo sát sau 3, 5 và 7 tuần bảo quản. The consumption of healthy food will always be topical since the intake of unhealthy food has an important impact on a person’s energy resources, their state of mind and weight. This served as an impetus for the present study, namely the preparation of a new ready-made mixture for biscuits enriched with bioactive Lucuma fruit powder. We analysed the antioxidant capacity of the product via four different methods DPPH, ABTS, FRAP and CUPRAC, expressed as mM TE/g powder (2.31±0.53; 9.89±0.29; 8.08±0.51; 24.15±1.13, respectively). The essential objective of this study is to obtain experimental data on adsorption and desorption. We evaluated the sorption isotherms for both processes using the static gravimetric method for the temperatures of 10°C, 25°C and 40°C and relative humidity within the 0.11 -0.90 range. Our results showed that the sorption capacity decreases with the increase in temperature under the conditions of constant water activity. The obtained isotherms were described with four different mathematical models – modified Chung–Pfost, modified Oswin, modified Halsey and modified Henderson. According to our calculations, the modified Halsey model could be recommended for a satisfactory description of the sorption isotherms of the new biscuit mixture. The monolayer moisture content of each temperature was calculated using the Brunauer-Emmett-Teller (BET) equation for adsorption and desorption.

The present study determined the physico-chemical parameters of the exotic fruit jujube ( Ziziphus jujube mill ) of Bulgarian origin – pH of 4.62, refractometric dry matter of 31.6 %, dry matter (in weight) of 36.78 %, TTA (total titratable acidity) – citric acid – of 0.67 %, 0.70 % malic acid, 65.95 % moisture, 0.78 % fibre, 1.41 % protein, 23.65 % carbohydrate, 0.24 % fat and energy value of 428.44 kJ/102.4 kcal. Equilibrium moisture content and monolayer moisture content were established for desorption concerning eight water activities in the 0.1 0.9 range and the temperatures of 10 °С, 25 °С and 40 °С. The coefficients of the modified Oswin, Chung-Pfost, Halsey and Henderson models were obtained statistically. The modified Halsey model is recommended as a description of the desorption isotherms of jujube ( Ziziphus jujube mill ) since it corresponds to the criteria for model assessment and suitability. Via BET model linearization, the values of the monolayer moisture content for desorption at the temperatures of 10 °С 5.41 % d.b., 25 °С – 4.65 % d.b. and 40 °С 5.08 % d.b were determined.

Super food is an informal term for foods that benefit the body in many different ways. Super foods help to meet several dietary needs and are great sources of essential vitamin and minerals also fight disease and sickness, making them powerful anti-aging tools. Some super like avocado, rambuten, dragon fruits blackberries, blueberries, corn, garlic, ginger, onion berries, etc. All foods that have been associated with preventing age are called antiaging foods. The aging process is natural of life for every person. There are many products and methods to prevent and reduce aging, from antiaging skin care The study was carried out to determine the different types of super food product and shilf life (packaging) of orange squash and ginger ele juice, kiwi sherbet produced were prepared and were processed into juices and sensory analysis of the juices were done. Fruits juices of orange, which was stored for 6o day in orange squash, and ginger ele, product were pressurization and storage in packaging glass bottles (250ml). Sensory evaluation showed that there was no significant difference among the juices from four samples considering color and overall acceptability. But considering flavor and texture there was significant difference among the juices from three samples and sample 3 was the best. However, the shelf life of juice was established within 30 days.

The unfamiliarity of European consumers with fresh tropical fruits has restricted their introduction on the international markets. Several tropical species, such as Pouteria lucuma, have instead a great economic potential for the European markets, producing edible fruits known for their nutritional and healing properties. Currently, fruit aroma and sensory characteristics are one of the primary factors determining the fresh fruit quality and consumers’ choice and purchasing intention. Therefore, in the last years great attention has been shown towards the characterization of Volatile Organic Compounds (VOCs) which contribute to characterize odors and flavors of a wide variety of tropical fruits and that can attract the interest of consumers. Materials and methods – In this work, proton-transfer-reaction time-of-flight mass spectrometry (PTR-MSTOF) measurements were carried out to assess for the first time, the VOCs profile of lucuma fruit, which is much common and widely consumed in Peru and Chile. Results and discussion – More than 50 aromatic compounds were determined in ripe fruits and the most abundant signals observed were m/z = 27.022, 33.033, 45.033 and 47.049, which were tentatively identified as acetylene, methanol, acetaldehyde and ethanol, respectively. Interestingly, many of the compounds that usually contribute to the flavor of several tropical fruits, such as mono-, hemi- and sesqui-terpens, were not present in the aroma profile of the lucuma fruit. Conclusion – The entire dataset obtained shows that the lucuma fruit aroma is due in large part to the presence of short-chain alcohols (methanol, acetaldehyde, ethanol) but also of volatile esters, aldehydes and hydrocarbons that contributes to the complex mixture of volatile aroma.

Four equilibrium moisture content/equilibrium relative humidity (EMC/ERH) equations (Modified-S.M. Henderson, D.S. Chung H.B. Pfost, Modified-G. Halsey and Modified-C.R. Oswin) are evaluated for their ability to fit data for grains and seeds. Thirty-six data sets comprising 18 crops are included. Comparisons are based on mean relative percentage deviation, standard error of the estimated value and residual plots. The Modified-Henderson and Chung-Pfost equations are good models for starchy grains and fibrous materials. The Modified-Halsey equation is a good model for high oil and protein products. The Modified-Oswin equation is a good model for popcorn, corncobs, whole pods of peanut and some varieties of corn.

Knowledge of the sorption properties of foods is of great importance in food dehydration, especially in the quantitative approach to the prediction of the shelf life of dried foods. Equations for modelling water sorption isotherms are of special interest for many aspects of food preservation by dehydration, including evaluation of the thermodynamic functions of the water sorbed in foods. Knowledge of the thermodynamic properties associated with sorption behaviour of water in foods is important to dehydration in several respects, especially in the design and optimization of unit operation.
