Fotografía gastronómica. Del contexto social a la exaltación del alimento

Abstract

Pictures of food, cuisine and by extension, regardless of its finish, leaving a unique testament about time, culture and society. The photograph is part of this set of historical documents. The origin of the development of photographic technique to repair both broke into the art world culminated with the contributions of Joseph Nicephore Niepce and Louis Daguerre in the nineteenth century. It is precisely one of the images of Nièpce -Table served (1823-1825)- which connects with the still unknown food photography whose iconographic genesis of the still life exploited during the first years of reproduction in journals model. The evolution of food photography, linked to technical and culinary development of the twentieth century has given rise to various subgenres that deserve study and attention. Generic 'Food Photography' or food photograph with commercial mission of the fifties, the idealized and precious 'Food Style' current food photography has led to the provocative 'Food Porn' where creativity, technology, design and significance of food have expanded giving rise to multiple readings sublime food to turn it into a game of seduction.

Las imágenes de alimentos, y por extensión de gastronomía, independientemente de su acabado, dejan un testimonio inigualable sobre el paso del tiempo y los tipos de cultura y sociedad; forman parte del conjunto de documentos denominados históricos. El origen del desarrollo de la técnica fotográfica que con tanto reparo irrumpió en el mundo del arte, culminó con las aportaciones de Joseph Nicèphore Nièpce y Louis Daguerre en el siglo XIX. Y es precisamente una de las imágenes de Nièpce -Mesa servida, (1823-25)- la que conecta con la todavía desconocida fotografía gastronómica cuya génesis iconográfica parte del bodegón, modelo explotado durante los primeros años de reproducción en revistas especializadas. La evolución de la fotografía gastronómica, ligada al desarrollo técnico y culinario del siglo XX, ha dado lugar a diferentes estilos o subgéneros que merecen estudio o atención. Del genérico ‘Food Photography’ con misión comercial de los años cincuenta, al idealizado y preciosista ‘Food Style’ actual, la fotografía gastronómica ha desembocado en el provocador ‘Porn Food’, donde creatividad, técnica, diseño y significación de la comida se han ampliado dando origen a múltiples lecturas que subliman el alimento para convertirlo en un juego de seducción.
