This volume contains papers presented at the first food and nutrition conference held in Papua New Guinea. The conference was held at the University of Technology in Lae in 1975. The volume contains abstracts for all papers, a number of recommendations for action arising from the conference, 41 full-length papers and 5 short ones. Topic addressed include human nutrition, food value of certain crops, cropping systems, plant breeding, animals used for food, crop agronomy, crop storage, entomology, plant pathology, agricultural outreach, training, marketing, economics and food processing.

Uniting Perception and Reality in Human Nutrition

Using a case study, this paper aims to explore the potential challenges and limitations of a mixed methods approach to a food and nutrition project. Human nutrition studies focus heavily on measuring intake, but do not always consider the individual perceptions that influence food choice. This case study uses food frequency questionnaires and interviews to produce a holistic understanding of how ... [Show full abstract] perceptions underlie larger trends in consumption for Canadian young adults. The qualitative data provided context for the quantitative results that allowed for wider interpretations to be made from the data, specifically the creation of recommendations for change that would target the specific issues facing young adults. While there were challenges in integrating the two data sets, a mixed methods approach was found to be appropriate and beneficial for these types of data and produced results of sufficient quality and breadth to inform future applications.

[Show full abstract] the main Se sources are the burning of coal and selenite addi- tions to animal feedstuffs. Reduction processes in sediments, soils, and feedstuffs to yield elemental Se act as sinks for available Se forms. In soils and crops, Se levels get enhanced from recycling of manure, dung, and sewage sludge, which is beneficial for Europe. New data from Austria have been added to the detailed discussions. In human nutrition, Se is sup- plied via pork, liver and kidneys, seafood, and cereals, but main sources as well as blood Se levels vary between different countries and nutritional habits. Food processing, like boiling, baking, or grilling, results in Se losses.

[Evaluation of a teaching program of nutrition in agronomy]

The purpose of this study was to evaluate a set of teaching materials on food, nutrition and agriculture, adapted at the Institute of Nutrition and Food Technology (INTA), University of Chile, within the scope of a project with AID and the School of Agronomy of the Chilean Catholic University (U. C.) aimed at incorporating the teaching of human nutrition into the curriculum of Latin American ... [Show full abstract] agronomists. A one semester course (54 hours) was given to 22 students of the 7th semester of Agronomy and two Ecuatorian agronomists (with AID scholarships). A set of knowledge evaluation instruments was applied at the beginning and at the end of the course. A total of 83.3% of the students passed the final examination (with more than 75% of correct answers). The difference between the initial and final performance was highly significant (p less than 0.001). According to the students' and teachers' opinions, the general textbook and the teachers book contributed effectively to meet the learning objectives whereas the students handbook needed some modifications. In conclusion, the program is an important contribution to the education of agronomists in a new conception of their role in regard to improvement of the nutritional status and quality of life of the rural population. With a few minor modifications, a final version to be used in the countries of the Region, shall soon become available.

While many poor residents living in rural areas have access to land and water resources for productive use indications are that food produced at household level currently makes an insignificant contribution to the diet of rural households. Since malnutrition is the result of many factors, the study took a multidisciplinary approach, including human nutrition, social anthropology and agronomy perspectives.
