Relatively few investigations have yet focused on quality perception of the sonic environment in eateries, i.e. restau- rant soundscapes. The aim of this exploratory study is to investigate the correlation between acoustic and per- ceptual features in such sonic environments. A total of 31 binaural recordings from everyday eateries, divided into the three categories fastfood, café and lunch restaurants, were carried out. On-site annotations of typical restau- rant characteristics and perceptual ratings were done on each location, based on the 8-adjectival scale suggested by Axelsson et al. (2010) in the Swedish Soundscape Quality Protocol. Acoustic features were extracted from the record- ings and analyzed. Using correlation coefficient analysis, it was found that overall loudness did not significantly corre- late with price level of the restaurants. Loudness measures were found to correlate to numerous perceptual features; a louder sonic environment might be perceived as less calm, less pleasant and more chaotic. Mean loudness levels could not be said to significantly differ between the three restau- rant categories. The results suggest that the division into three restaurant categories was either substandard, or that the type of restaurant may be of little importance for the actual sonic environment. Furthermore, results indicated that spectral content and soundscape variability may affect perceptual features.

Managers believe that in-store music has positive effects on customers' responses; consequently, it is widely used in different service settings such as supermarkets and coffee shops. However, prior research shows inconclusive results about the effects of in-store music – namely positive, non-significant and even negative effects. To shed more light on the actual effects of in-store music, the authors provide a systematic literature review of journal articles to explore such effects in six frequently studied service settings: supermarkets, retail, restaurants, bars, cafeterias and banks. The present literature review has three objectives. First, the authors develop a conceptual framework to provide structure and guidance to the research stream about in-store music in service settings. Second, the authors take a closer look at the existence of in-store music (i.e., whether the presence of in-store music helps, has no effect, or ‘hurts’) as well as on the design of in-store music for each service setting separately (i.e., how in-store music has to be designed to have beneficial effects). Third, after elaborating the status quo (what do we know?), this review identifies areas for future research (what do we need to know?).

There is considerable evidence to suggest that music has adaptive characteristics. Individuals use recorded music to transform the emotional landscape to coincide with transitory needs and desires. Also, music has frequently been reported to provoke uncommon emotional and physical reactions often referred to as peak experiences. In many cultures, that have limited industrial and technological development, active participation in musical activities is pervasive and all individuals are considered musical. In contrast, the musical elitism that has evolved in the Western world intimates that musical ability is specific to a talented minority. The elitist notion of musicality restricts the majority to procurers of rather than producers of music. However, experimental and theoretical sources indicate that music is an innate and universal ability and, therefore, active participation in music may have adaptive characteristics at many levels of proficiency. Positive life transformations that occurred for members of a choir for homeless men, since joining the choir, provided an opportunity to determine if group singing was a factor in promoting adaptive behaviour. A phenomenological approach utilizing a semi-structured interview wasemployed to explore the choristers' group singing experience. Analysis of the interviews indicated that group singing appears positively to influence emotional, social and cognitive processes. The choristers' perceptions of the adaptive characteristics of group singing fell within four principal categories: clinical-type benefits, benefits derived from audience-choir reciprocity, benefits associated with group process and benefits related tomental engagement. Active participation in singing may act to alleviate depression, increase self-esteem, improve social interaction skills and induce cognitive stimulation. The themes adhere to the tenets of flow theory which advocate the importance of mental stimulation and social interaction in increased life satisfaction. The emergent themes provide a preliminary basis for the development of a theory of the adaptive characteristics of group singing and also provide a framework for further investigation in this area.

This study examines the important role of the servicescape in relation to customers’ cognitive (beliefs about servicescape quality), affective (affect and satisfaction) and behavioral responses (desire to stay) in the context of convention and exhibition centers in Macao. Unlike previous servicescape studies, we include two personal customer characteristics, namely perceived sacrifice and value-for-money considerations, as potential moderators of the relationship between customers’ satisfaction and the desire to stay. Overall, our results suggest that servicescape elements positively influence customers’ perceived quality of the service, their affect, customer satisfaction and desire to stay. Furthermore, this study reveals that value-for-money considerations enhance the positive impact customer satisfaction has on customers’ desire to stay in convention centers and that customers’ perceived level of sacrifice has a direct effect on their desire to stay. Theoretical and managerial implications are also presented.

The authors investigate the moderating effects of ambient odors on shoppers' emotions, perceptions of the retail environment, and perceptions of product quality under various levels of retail density. The context for the experiment is a real-life field location—in a community shopping mall. The pleasing ambient scents are hypothesized to positively moderate shoppers' perceptions of their environment. A multigroup invariant structural equation model that accounts for different retail density levels shows that the relationship between ambient odors and mall perception adopts an inverted U shape. Ambient odors positively influence shoppers' perceptions only under the medium retail density condition. Incongruity theory informs the interaction effect between the two atmospheric variables. A moderate incongruity level is more likely to trigger a favorable evaluation of the situation (the shopping experience), object (the products sold), or the person (the salesclerks).

A field study was conducted to test, in a natural setting, the effects of background music of different pleasure intensity (low and high) on store evaluation and to explore the underlying psychological mechanisms. One hundred ten shoppers (85 females and 25 males) in a mall outlet of a national retail chain reported store evaluation, attitude towards the servicescape and the sales personnel, and background music pleasure. Structural analyses (EQS) revealed that pleasure intensity influenced store evaluation but not by direct transfer of affect. Instead, results were indicative of a powerful mediating effect of the attitude towards the servicescape and the sales personnel. It was found that the attitude towards the servicescape, influenced by pleasure intensity, in turn, affected store evaluation both directly and indirectly via its positive effect on attitude towards the sales personnel and a strengthening of the relationship between attitude towards the sales personnel and store evaluation. The theoretical and managerial implications of the results are discussed.

Our evaluation of food is influenced by a variety of contextual information perceived via the senses. Here we investigated whether there are interactions between auditory stimuli and basic tastes (indicated by the names of typically sour and bitter foods). Participants took part in a version of the Implicit Association Test (IAT) in order to measure the strength of the association between high-pitched sounds and (the names of) foodstuffs having a sour taste, and between low-pitched sounds and (the names of) foodstuffs having a bitter taste. Analysis of the latency and accuracy of participants' responses highlighted the existence of a significant crossmodal association between these different attributes. This result suggests the need for research into the influence of auditory stimuli on food evaluation, an interaction that has typically been overlooked when considering the multisensory perception of food.
