Consumer perceptions of meat production: Enhancing the competitiveness of British agriculture by understanding communication with the consumer

Abstract

Purpose To identify factors that could influence consumer perceptions relating to meat production and areas where further development would be of assistance to British agriculture. Design/methodology/approach Qualitative semi‐structured interviews of a quota sample of Scottish meat purchasing consumers. Findings Results indicate that consumer views on meat production vary widely and that while there are some differences between rural and urban consumers the differences are rarely simple. Views were expressed on a variety of factors including livestock producers, agricultural production, certification and traceability. Relatively few consumers were routinely concerned with assurance labels. Consequently, knowledge of underpinning standards was limited. Primary sources of meat were the major supermarket groups with a distinct bias towards older consumers among those who preferred to shop in small butchers shops. Attitudes towards producers were mainly positive but some consumers remained sceptical about producer behaviour during hard times. Research limitations/implications While more research would clearly be required to consider a broader spectrum of UK consumers, these current data indicate that consumer understanding of food information and indeed their interest and credibility of the current systems is a subject that would benefit from much wider research. The practical implications for the development of Government policy and for the idividual producers are substantial and would benefit from considerable clarification. Originality/value Prior research concerning meat production and the views of consumers is limited. Theses findings have implications for future sector‐based communications to consumers, in that equal emphasis should be given to both rural and urban consumers. More collaborative communications measures must be implemented to ensure consumer awareness/understanding of underpinning assurance label standards and bring about loyal purchase preferences for British produce.

... Ethical consumers purchase goods based on a range of considerations including environmental and social dimensions of production (Carey et al., 2008;Carrington et al., 2021). Ideas about farming are important components of consumers’ value judgements about the foods they purchase and consume. Nevertheless, a divide exists between public perceptions and the realities of agricultural practices. We take a novel approach, using sentiment analysis, amongst other methods, to explore what consumers think about farming and how the visual elements of agricultural images might contribute to these perceptions. Data were drawn from responses to questions about three photographs of contemporary UK dairy farms, part of an online survey (n = 521), exploring public perceptions of food and farming. Sentiment and content analysis, descriptive statistics and Spearman’s rank correlations were used to analyse the data. Participants thought good animal farming involves an evaluation of both farmers’ skill and the relative ethical correctness of certain farming practices. Dirt and untidiness were linked with an increased likelihood of animal disease, and cleanliness and tidiness with a decreased likelihood. According to respondents, keeping cattle inside was problematic, whereas keeping animals outside is more appropriate, linked to their ability to graze in fields and the perceived goodness of a grass-based diet. Respondents discussed the need for farmers to be qualified, passionate and care for their animals. The paper concludes by reflecting on the use of images and sentiment analysis in this type of research, suggesting that along with certain benefits there are limitations to these methods.

Animal welfare, often regarded as a singular and generic factor, necessitates explanatory models that reflect its multidimensional nature. This study addresses this complexity by investigating the purchasing behavior of consumers in developing countries, focusing on animal welfare-certified foods. To achieve this goal, a conceptual analytical model was developed, grounded in an extensive literature review and expert consultations. The model positions beliefs about animal welfare as the central component, with empathy for animals and knowledge of the production sector as antecedents. It also identifies beliefs about certified products, engagement, and perceived quality attributes as consequences. The methodology involved an online survey of 707 Brazilian consumers to test eight hypotheses derived from the model using structural equation modeling. The findings confirmed all hypotheses at a significance level of p ≤ 0.05, underscoring the cognitive, affective, and educational bases of consumer beliefs about animal welfare. These beliefs were shown to positively influence engagement with, and perceived quality attributes of, certified products, ultimately shaping purchase intentions. However, a negative relationship between beliefs about animal welfare and beliefs about certified products suggests skepticism among Brazilian consumers regarding certification systems. This study contributes to the literature by presenting a multidimensional model that offers both theoretical insights and practical implications for marketing strategies and certification systems, particularly in developing country contexts. This novel approach lays a foundation for future cross-cultural validations and product-specific investigations.

The sharing economy offers potential economic, social, and environmental benefits, yet participation is not universal. Our research, based on a survey of 873 individuals across three generations in the Czech Republic, investigates the barriers that limit engagement and how these vary across different generations. We examine supply and demand side barriers, identifying four key components on each side (Principal Component Analysis). On the supply side, these include user uncertainty, personal uncertainty, uncertainty from lack of information, and uncertainty from the platform. On the demand side, we identified user uncertainty, personal uncertainty, uncertainty from perceived value, and uncertainty from operational risks. Our findings reveal significant generational differences concerning these barriers. On the supply side, the first three components show statistically significant differences between generations. On the demand side, we found substantial differences for the second and fourth components. The implications of our research suggest that peer-to-peer platforms could benefit from employing generational marketing strategies to address these barriers, thereby increasing their e-commerce volume.

Food product safety and quality are considered to be of the utmost significance on a global scale. Highly publicized food safety incidents have significantly increased public interest in food traceability, defined as “the ability to track any food, feed, food-producing animal or substance that will be used for consumption, through all stages of production, processing, and distribution” (European Union). The World Health Organization (WHO) suggests that governments, producers, and consumers work together to ensure food safety, which calls for the dissemination of pertinent information throughout complex food value networks. Therefore, it is in the best interest of profit-driven businesses to implement information systems for tracking food goods, a significant byproduct of which is the likelihood of increased profitability. This paper aims to explore the ample possibilities for such implementations that are now available thanks to blockchain technology. In particular, the goal is to explore the dynamics of this technology and identify how it helps to create good customer relationships. For this purpose, the case of Lavazza, an important Italian roasted coffee company that has recently introduced a blockchain-tracked product to the market, is analyzed in detail, including all the steps that made the application of the technology possible and how it was finally communicated to the consumer. The case study offers a concrete example that resulted from both stakeholders’ internal need for greater traceability and consumers’ external need for greater transparency regarding the company’s sourcing processes. In this pilot project, collaboration among all the entities that are part of the chain was essential to delivering a formative, customized, and ultimately, easy-to-understand experience to the end consumer. Finally, Lavazza is an example of a company that decided to challenge itself by following a trend that will be increasingly present in future socioeconomic scenarios.

Food safety is a public health issue of paramount importance. In this regard, blockchain has emerged as a promising technology that allows users to effectively and efficiently record the origin and flow of products and eliminate or reduce harmful food fraud. Consumers can benefit from this development by receiving up-to-date and verifiable information about the origins and delivery routes of their purchases. Drawing on signaling theory and the results of two experimental studies with 151 and 152 participants, respectively, we investigate how the use of blockchain to trace food products impacts consumers’ perception of product quality as a mediating variable and subsequently their purchase intention. Our framework further considers brand familiarity as a moderating variable. The findings from the two experiments show that blockchain labels as a signaling mechanism in food supply chains help to strengthen consumers’ perceived quality of food products, which, in turn, increases their purchase intention. This effect is more pronounced for less familiar brands, which is valuable information for managers who want to build a brand’s reputation. From an academic perspective, we highlight the applicability of signaling theory to identify blockchain-based traceability systems as important drivers of perceived product quality and consequently purchase intention.

Home-grown protein crops as an alternative to soya in dairy cattle meals, as well as other sustainable ethical-based practices, have been proposed to increase the sustainability of dairy production. Data on consumer acceptance of the three novel sustainable production strategies of ‘agroforestry’, ‘prolonged maternal feeding’ of young cattle and ‘alternative protein source’ were collected through an online survey on consumer in six European Union countries: Austria, Belgium, Denmark, Finland, Italy and the UK. Using Chen’s extended version of the Theory of Planned Behaviour model, the underlying model hypotheses on the attitudes and intentions of these consumers towards these production practices were tested, to establish the explanatory power of the model in the specific context of novel sustainable production strategies. Furthermore, the influence of gender and consumer ethical choices on their attitudes towards these innovative practices was also tested. These data show that ‘prolonged maternal feeding’ is the novel production practice that has the highest level of acceptance by consumers in all of these countries, with the least accepted practice as ‘alternative protein source’. Unexpectedly, increased availability of home-grown feed, which is grounded on both farmer and societal interests for higher input self-sufficiency and more sustainable production practices, was little appreciated by consumers, although their intentions appear to be dependent on their moral norms.

El estudio planteó cuatro objetivos fundamentales que orientaron el desarrollo del estudio, los cuales se detallan a continuación (a) determinar la relación entre el comportamiento del consumidor y la preferencia de compra en supermercados Wong, (b) medir el nivel de los factores del comportamiento del consumidor en supermercados Wong, (c) medir el nivel de los factores de la decisión de compra en supermercados Wong, (d) determinar la correlación entre la variable preferencia de compra y sus dimensiones variedad de productos, elementos tangibles e intangibles. Se empleó un enfoque cuantitativo, la muestra fueron 200 clientes, la recolección de datos se realizó mediante una encuesta. Los resultados indican una correlación positiva (Rho = 0.671) entre el comportamiento del consumidor y preferencia de compra. Se concluye que la experiencia del cliente y la calidad del servicio son determinantes en la fidelización y preferencia de compra en supermercados Wong.

In the last decades, numerous food scandals have attracted policy makers’ interest and subsequently induced retailers to actively improve food safety. Blockchain technology allows consumers to track the flow of food products and reduce food fraud, such as counterfeiting, dilution, or adulteration. Using three experiments conducted with Austrian business students as well as an online convenience sample, we investigate how the traceability of food products impacts consumers’ trust in the retailer and subsequently influences consumers’ retailer choice. Our model further considers retailer familiarity and the disclosure of blockchain benefits as important moderators of the impact of blockchain-based traceability systems on trust in the retailer. The model was tested using ANOVA, ANCOVA, and Hayes’ PROCESS models. In terms of fostering consumer trust, the findings show that retailers who are unfamiliar to consumers profit more from the use of blockchain technology than do better-known retailers. Moreover, informing consumers about specific blockchain benefits strengthens the positive effects of a blockchain-based traceability system.

The present study aims to clarify how background factors influence consumers’ intention of purchasing organic food from individual, social, and information perspectives (i.e., health consciousness, self-perceived vegetarian, as well as labeling). Another aim is to explore the moderating role of word-of-mouth (WOM) in relationship between purchase intention and purchase decision to fill in the intention-behavior gap in the field of behavior of purchasing organic food. The data were acquired through purposive sampling method by distributing questionnaires among organic food consumers. 280 out of 306 questionnaires were valid to proceed to statistical analysis. All proposed hypotheses were verified through structural equation modeling (SEM) and SPSS PROCESS regression analysis. As suggested from the study results, except for hedonistic motivation factor, the other background factors (i.e., individual, social, and information) significantly impacted consumers’ purchase intention. Moreover, the relationship between purchase intention and purchase decision was significantly moderated by word-of-mouth (WOM). The present study sheds light on how to motivate consumers’ purchase intention by stressing vital background factors from individual (i.e., purchase attitude and health consciousness), social (i.e., self-perceived vegetarian and environmental concern), and information perspectives (i.e., labeling and social media information). Besides, a novel insight is presented for marketers on how to deepen the relationship between consumers’ purchase intention and purchase decision via the moderating effect of word-of-mouth (WOM).

In this paper, an exploratory qualitative study of the communication between packages and consumers found a recurring theme of duplicity in consumers' interpretations of product labelling and packaging. Therefore, a normative framework is proposed to guide the design of effective communication in product packaging. Based on Habermas' theory of communicative competence, the framework suggests that a set of norms (i.e. the norm of truthfulness, the norm of sincerity, the norm of comprehensibility and the norm of legitimacy) can guide the complex task of designing good product packaging. By following these normative guidelines, marketers can both aggressively position their package to attract and promote, while concurrently avoiding package communication that may be construed as duplicitous. The theory provides a useful benchmark against which both public policy makers and manufacturers can evaluate the level of distortion in labelling and packaging. Consumers should benefit in terms of a clearer depiction of the product offering in the market-place. Marketers adopting these guidelines should benefit from a reduction in the level of package-generated consumer cynicism and an increased potential for enhanced long-term customer relationships.

Effective organizations are configurations of management practices that facilitate the development of the knowledge that becomes the basis for competitive advantage. A market orientation, complemented by an entrepreneurial drive, provides the cultural foundation for organizational learning. However, as important as market orientation and entrepreneurship are, they must be complemented by an appropriate climate to produce a “learning organization.” The authors describe the processes through which organizations develop and use new knowledge to improve performance. They propose a set of organizational elements that comprise the learning organization and conclude with recommendations for research to contribute to the understanding of learning organizations.

It binds one molecule each of nucleotide (ATP or ADP) and divalent cation (calcium or magnesium).
