Abstract

Production guides are given for meat and vegetable entrees, as well as desserts. The guides are designed for use in the Frozen Foil Pack Meal Feeding System at F.E. Warren Air Force Base. Procedures are described for the preparation of 100 portions of each of the designated items. Changes in formulation and evaluation of finished products are the result of extensive work at NRDC. The objective was to make it possible to use institutional type facilities. It is recommended that production procedures, especially critical control points as well as procedures, be followed closely in order to obtain a safe and high quality product.

The production guides contained in this report consist of thirteen meat substitutes. The primary purpose of these items is to serve as entrees for patients, who as vegetarians or by religious doctrine require meatless products. Secondly, these entrees are available for patients who desire a meatless item as a variation in their normal diet. Presently, in the majority of hospital feeding systems, a patient desiring a product of this type must select from a limited meatless menu, trying to construct his own entree. However, with the development of the meat substitute as a separate entity, he now has this option readily available.

Thirty-two operational guides are given for the procurement, issuing of ingredients, and preparation of frozen foods in the Air Force missile site feeding system. Each item's guide presents formulations for specific batch sizes and ingredients are listed in units used for procurement. Procedures for preparation incorporate methods and equipment used at the F.E. Warren Foil Pack Preparation Facility. Operational and Ingredient Room Notes cover information on alternate preparations and ingredients as well as special interest notes on problems typically encountered for that formula. An ingredient source guide provides information on stock available in the Federal Supply System.
