This chapter examines the techniques and apparatus associated with the reference method for oil content extraction. It also provides information on the composition of the oil extracted by the reference method, and this provides a benchmark for studies using alternative techniques. Some comparisons with other methodologies are provided, particularly the AOAC method commonly used for food labelling and the AOCS SFE method. The relation between results from the reference method and the efficiency of commercial extraction is also discussed.
