Munkánk során folyadékkromatográfiás módszert dolgoztunk ki a chili paprika fajtákban található kapszaicin mennyiségének a meghatározására. Az alkalmazott fluoreszcens detektornak köszönhetően a minta előkészítése egyszerű, nincs szükség a minták koncentrálására. A módszert alkalmazva 34 chili paprikafajta kapszaicin tartalmát határoztuk meg.
