Introduction
Current research interests are focused on aspects like development of sensors for automation and inline control of processes in the dairy industry; development of innovative products through microencapsulation by spray drying of substances such as Andean fruit juices, essential oils and natural extracts; extraction, purification and characterization of natural extracts with application in the food, cosmetic and pharmaceutical industry; emerging techniques for food processing and preservation.
