Climate change, linked with an increase in temperature, contributes to the possibility growing of non-typical and lesser-known vegetable species in the Slovak Republic, including okra. Seven okra cultivars were tested as part of this study, which focused on the basic yield parameters, antioxidant activity and total polyphenol content in okra fruits...
The study monitored the effect of differentiated mineral nutrition of microgreens species by solution of sodium selenate (2 mg Se/L) on the content of Se, chlorophylls, and other minerals. Chlorophylls were measured spectrophotometrically, Se by electrothermal atomic absorption method (ETAAS) with Zeeman-effect background and elements' concentratio...
The research task was focused on an important type of root vegetable – carrot (Daucus carota L.), cultivar ´Romance F1´ (family: Apiaceae). The main goal was to verify the application of soil biostimulant Agriful (based on humic and fulvic acids) and its impact on the yield potential and quality of carrot roots. Nowadays, it is the common need to i...
Cucurbita moschata Duch. is a seasonal crop, appreciated for its nutrimental and bioactive components especially carotenoids. From the whole edible plant, fruit is most often consumed which can be stored and also processed. Six varieties—Liscia, Matilda, Orange, Serpentine, UG 205 F1, and Waltham—of Cucurbita moschata Duch. were investigated, in or...
The chapter describes changes in the selenium content during storage on the example of processing carrots and preserving tomatoes, peas, and cabbage by methods characteristic of vegetables. The results showed no significant changes in total selenium content during carrot storage. The results of analyzes after thermal preservation of peas in brine i...
The choice of the method for the determination of selenium in biological samples depends on the form of selenium present in the sample to be analyzed. The choice of method depends on whether the selenium is to be determined from the total organically bound selenium, total organically bound selenium in the protein fraction, or individual selenium am...
This chapter is devoted to selenium and its role in organism. Selenium has been proved as an essential element for animals and humans. Perception of its role changed from the toxic toward essential element as in the last decade its importance has been described through its biochemical functions. Selenium can be found in the environmental components...
The level of selenium in the human body depends on its concentration in food. Selenium enters the food chain primarily from soils, its content in plants is a function of the soil–plant system conditions. Analysis of selenium status suggests that fortification of the soil substrate with sodium selenate appears to be effective and undemanding form of...
The risk of phytotoxicity and accumulation of selenium in the soil is significantly reduced by foliar application of selenium to photosynthetically active parts of plants. The use of foliar nutrition in practice has only expanded in recent decades, mainly due to the development of spraying techniques used in plant protection. Environmental factors...
Selenium plays a significant role in preventing certain types of cancer and cardiovascular diseases. The level of Selenium in the human body depends on its concentration in food. In turn, the content in vegetable crops is a function of the soil-plant system. There are many countries in the world with low Selenium content in the soil. The average da...
In rational nutrition, vegetables play an important role due to their high biological and low energy value. The most widespread vegetables in our country belong to root vegetables. They are grown mainly for bulbs, corms, rhizomes, fleshy roots, and hypocotyl tubers. Root vegetables can be eaten raw or cooked. Carrot (Daucus carota L.) is a basic re...

International Visegrad Fund Project Nr. 11530015 "Lesser-known species of vegetables, medicinal plants and edible mushrooms: new growing trends in context of V4 countries cooperation" is focused on the exchange of materials and information in the growing of medicinal and aromatic plants (MAPs) as well as lesser-known vegetables (including edible mushrooms).
The output of partial project processes is creation of cultivar collection with medicinal and aromatic plants (MAPs), less-known vegetables and edible mushrooms, followed by a workshop – scientific seminar in the topic under professional guarantee of submitter and the project partners.
Cultivar collection is interactively connected to the network by the help of QR codes; the web page will be serving besides scientific knowledge for propagation of the idea of economic and social cohesion of Visegrad countries.
