Introduction
Kyah Hester currently works with the Functional Grains Centre, based at Charles Sturt University Wagga. Kyah does research in Health Psychology, Personality and Behavioural Science. Her current project is based on understanding the factors that drive non-coeliac gluten avoidance.

This paper provided a summary of key findings from my PhD research, including prevalence rates of gluten avoidance behaviours, the features that characterise this population, and what it means fo the future of the wheat industry.
