Phytosterols (PS) are bioactive compounds widely distributed in nature and are similar to cholesterol in structure and function. They contribute to the decrease of cardiovascular diseases, which are associated with high‐cholesterol consumption. Plant sterols are lipophilic and need to be encapsulated to improve their solubility to be applied in foo...
Sugarcane bagasse, is one of the largest agriculture residues in the world and its chemical composition is interesting for several areas. Among one of the lipid components was found phytosterols. These are structurally and functionally similar to cholesterol, they are contributing to the reduction of cholesterol in the blood when consumed. Phytoste...
Phytoprostanes (PhytoPs) and phytofurans (PhytoFs) are plant oxylipins (isoprostane-prostaglandin-like compounds) formed by the free radical-catalyzed oxidation of α-linolenic acid (ALA, C18:3, n-3). These oxylipins have been previously described in an array of plant-based foods with similar concentrations as phenolics in some fruits and vegetables...
The aim of this work was to determine the effect of temperature on the formation of acrylamide in cocoa beans during drying treatment by an experimental and computational study, in order to assess the presence of this neoformed compound from postharvest stage. The computational study was conducted on the reaction between fructose, glyoxal from gluc...
The profile of reducing sugars developed during each stage of the postharvest of cocoa beans is an important quality index; these sugars are found to be one of the main precursors of flavor and neoformed compounds. However, its quantification after extraction from different parts of the bean is a challenge due to the complexity of the matrix. The p...
The aim of this study was to compare the quality of a mixture of cocoa harvested and fermented in three subregions of Antioquia (Colombia), from the chemometric profile based on multivariate statistical analysis. A mixture of clones CCN-52, ICS-1, FLE-2, and FEC-2 harvested in Bajo Cauca, Uraba and Magdalena Medio were subjected to a spontaneous fe...
Oxidative stress and inflammatory injury are responsible for a number of diseases, being strongly associated with neurodegenerative disorders, among others. Caffeinated and decaffeinated coffees act as antioxidant and anti-inflammatory agents in therapeutic processes or exert preventive roles in different pathological situations. Coffee's therapeut...
An exploration of the antioxidant power of curcumin, demethoxycurcumin, and bisdemethoxycurcumin, three natural antioxidants found in curcuma longa is reported in this work. We exhaust all structural possibilities leading to intramolecular hydrogen bonding and evaluate 15 isomers in total. Calculations were carried out in gas phase and in solution...
Cocoa has been widely discussed as a bioactive food rich in sensory stimulation and health benefits. However, no information has been provided concerning phytoprostanes (PhytoPs) and phytofurans (PhytoFs) in cocoa. These compounds are of interest because they play a role in the regulation of immune function. The present study included 31 cocoa clon...

Heavy metals are toxic compounds, which in low quantities can cause severe damage to human health. Heavy metal compounds appear in water naturally, but some anthropogenic activities can generate large discharges. Once in the water bodies, these compounds dilute and remain in quantities that are difficult to detect with most common analytical proced...
Lutein, a xanthophyll, is associated with decreasing age-related macular degeneration, the risk of atherosclerosis and preventing some diseases (Bovier, Lewis, & Hammond, 2013; El-raey, Ibrahim, & Eldahshan, 2013). When lutein is extracted, it becomes highly unstable, reducing its functionality as an antioxidant. The aim of this research was to imp...

The accumulation of oxidized ApoB-100-containing lipoproteins in the vascular intima and its subsequent recognition by macrophages results in foam cell formation and inflammation, key events during atherosclerosis development. Agents targeting this process are considered potentially atheroprotective. Since natural biflavonoids exert antioxidant and...
The processing and commercialization of fruit and vegetables produces considerable amounts of by-products, the disposal of which can be a problem for the industry, but can also provide a valuable source of bioactive compounds. The aim of this research was to evaluate the potential of different by-products generated in Central Mayorista de Antioquia...
Actually by-products from lettuce and cabbage have not been properly used despite the fact that they are rich in bioactive compounds as lutein. It is known that lutein plays an important role in the prevention of degenerative diseases. Lutein, is recommended as a health supplement for the prevention of cancer and diseases related to retinal degener...
In recent years, polyphenols from Theobroma cacao and other plant sources have been widely used as natural chemopreventive agents due to their antioxidant properties. Some studies indicate that the polyphenol content, particularly flavan-3-ols, is strongly correlated to the intensity of the purple color in fresh cocoa seeds. However, no visual mark...
Abstract
Introduction and aim: Accumulation of oxidized low density lipoproteins (oxLDL) in the vascular intima and the subsequent macrophage-mediated pro-inflammatory response are two key events during atherosclerosis development. Agents that target these two processes are considered to be potentially atheroprotective. Since natural Biflavonoids...
The production of rainbow trout in Colombia supports 11.36% of domestic production; profit residues can be used for the extraction of oil, either by heating (Soxhlet), or by Supercritical Fluids (SF) (critical temperature and pressure of the gases). It was proposed to extract and characterize fish oil-derived by-products of rainbow trout using Soxh...
