Alimentos para fins especiais são alimentos especialmente formulados que atendam às necessidades de pessoas em condições metabólicas e fisiológicas específicas, sendo indicados a dietas com restrição ou ingestão controlada de nutrientes ou para grupos populacionais específicos, como lactentes e crianças de primeira infância, gestantes e nutrizes, idosos e aos demais grupos populacionais específicos (praticantes de atividade física, por exemplo). Por se tratar de alimentos que se destinam a vários grupos da população e ao aumento do conhecimento da relação entre alimentação e saúde, o mercado de alimentos para fins especiais vem crescendo ultimamente. No entanto, sabe-se que em muitos casos, a alteração da formulação de alimentos para adaptá-lo a um grupo específico, pode diminuir sua qualidade sensorial, diminuindo sua aceitação. Desse modo, o objetivo deste projeto de pesquisa é atuar no desenvolvimento de alimentos para fins especiais, garantindo além das características nutricionais específicas a essa classe de produtos, qualidade sensorial e, consequentemente, maior aceitação por parte dos consumidores.
