1970 至 90 年代,養鱉成為農家副業;90 年代後, 受「馬家軍效應」影響,臺灣業者相繼投入養鱉業以供應中國市場。 受到食療文化影響,臺灣民間視鱉為可滋陰、涼血、補虛與補氣之食 感謝兩位審查人細心閱讀本文,並提出許多建議與修正方向,使本文在論證與結構上 更為縝密完善。此外,本文的完成亦感謝臺北華西街、彰化縣、高雄美濃與屏東里港、 內埔與萬丹等多位養鱉戶所提供之相關養殖與消費知識,筆者特此致謝。
