The Danish food sector is losing jobs, and producers face a long-term trend of income problems. Agriculture is challenged with regards to compliance with the EU habitat- and water directives, which indicate the need for differentiating land use in Denmark. There is thus significant economic, societal and environmental potential in agricultural diversification through developing Danish provenance foods. We explore barriers and opportunities for the creation of provenance food products in collaboration with regional stakeholders
