Introduction
Our research group works at the CIDCA (Centro de Investigación y Desarrollo en Criotecnología de Alimentos), National University of La Plata. We work in the area of postharvest biology and technology of fruits and vegetables, studying technological alternatives to delay chilling injury, decay, ripening, senescence. We also work analyzing antioxidants, sugars, volatile, ethylene, pigments, browning, cell wall disassembly, oxidative stress, enzymes, etc.

Bell peppers (Capsicum annuum L.) are prone to chilling injury (CI) when stored at temperatures below 7 °C. Melatonin, a natural plant regulator, plays a critical role in defending against different pre- and post-harvest abiotic stresses, including those associated with cold storage. This study aimed to assess the effects of applying exogenous mela...

Fresh-cut produce have become widely popular, increasing vegetable consumption in many parts of the word. However, they are more perishable than unprocessed fresh vegetables, requiring cold storage to preserve their quality and palatability. In addition to cold storage, UV radiation has been used experimentally to try to increase nutritional qualit...
Article
Low-temperature conditioning (LTC) has been reported to effectively control post-harvest chilling injury (CI). Conspicuously, it has not been widely adopted by the industry. This is in part related to an incomplete understanding of the factors governing the treatment's efficacy and consistency along genotypes and maturities. Herein, we evaluated th...
Article
Brassinosteroids are polyhydroxy steroid hormones, tested to induce cold acclimation in whole plants and some harvested fruits. So far, no works have determined whether such strategy may improve the chilling tolerance of immaturely harvested Cucurbits, which are, among the most sensitive vegetables. Herein, we evaluated the efficacy of 24‐epibrassi...

BACKGROUND Vegetable grafting has been increasingly evaluated to improve preharvest tolerance to biotic and abiotic stresses. However, very few studies have identified rootstock–scion combinations able to improve fruit shelf life and reduce the susceptibility to postharvest disorders. Herein, a purple eggplant scion (cv. Monarca) was grafted onto a...

Purpose The purpose of this paper was to develop a loaf bread enriched with naranjilla (lulo) fruit (shells, seeds and pulp) and determine the technical quality, sensory acceptability and bioavailability (by in vitro digestion) of antioxidant components. Design/methodology/approach Loaf bread was prepared by using a no-time bread-making process. T...
Article
Vegetable quality shows extensive variation along a single production cycle depending on the harvest season. So far, these effects have been mostly attributed to variations in preharvest climatic conditions, resource availability and cultural practices. Whether or not some of these differences are also influenced by variations in the plant age is u...

The growing interest in snacks of non-starchy vegetables, prepared without frying is explained by its lower caloric density, compared to dehydrated and fried potatoes. Occasionally, conventional high-temperature drying methods may cause losses of bioactive components. Consequently, there is interest in the search for new processing methods that red...

Eggplant (Solanum melongena L) quality and storability can be influenced by time of harvest. Effects on sugars, antioxidants, chilling tolerance, and postharvest shelf-life of eggplant due to production cycle activities were determined. Late-season fruit had the highest sugars and antioxidants levels. Early-season fruit had the lowest level of pulp...

Artichoke (AF), eggplant (EF) and tomato (TF) flour were used as nutritional ingredients for wheat dough. A replacement of wheat flour with 5 or 10% of these vegetable flour was performed. Hydration properties (equilibrium adsorption isotherms, solvent retention capacity), capacity of blends for dough development (farinographic assay) and the proxi...
Article
Eggplant (Solanum melongena L.) is the third solanaceous of horticultural importance in the world, after potato and tomato. In the agricultural production of this vegetable, there are post-harvest losses and waste generation. Reduction of these inconveniences can be avoided by obtaining ingredients with high nutritional value for food processing, a...

Ethylene is accepted to be a key player in the regulation of climacteric fruit ripening and senescence of leafy vegetables. In contrast, there is still disparity in the literature on the role it may have on quality deterioration of edible petioles. In this work, we evaluated the influence of the ethylene generator 2-chloroethylphosphonic acid (Ethe...

Whereas the production season is accepted to exert profound influence on fruit physiology, micro-structure and quality, very few studies have attempted to find liaisons between these traits. Herein, we determined the micro-structural and quality changes of eggplant fruit produced in Late Spring (mean air temperature 22 °C; max. 28 °C; min. 16 °C),...

Ascorbic acid (AA) is a major redox buffer in plant cells. The role of ethylene in the redox signaling pathways that influence photosynthesis and growth was explored in two independent AA deficient Arabidopsis thaliana mutants (vtc2-1 and vtc2-4). Both mutants, which are defective in the AA biosynthesis gene GDP-L-galactose phosphorylase, produce h...
