Fiber assays have the great advantage that there are internationally recognized normed methods. However they were developped with cereals in view, and for fruit and vegetables they tend to overestimate soluble fibers as some of the steps (starch degradation) cause pectin beta-elimination and therefore solubilisation.
We did some comparisons in: http://dx.doi.org/10.1016/j.foodres.2013.10.022
And for methods for isolation of structural polysaccharides from non starchy fruit & veg: doi:10.1016/j.carbpol.2005.03.002
