Figure 12.1 Green coffee beans are viable and metabolically active. A coffee bean was sliced in thin disks and incubated in triphenyltetrazoliumchloride (TTC) solution as described by Selmar et al. (2008). After the viable and metabolic active cells have imported the TTC, it is reduced and a red dye is formed.
