A masters student at Universitat Autonoma de Barcelona working on the functional properties of donkey milk. The project evaluates the use of different processing treatments on donkey milk with key interest in UHPH technology. Ability of UHPH to enhance the microbial quality whiles preserving the functional components in the donkey milk will be assessed. Technological properties of the milk will be assessed based on its coagulation properties and its suitability for producing dairy products.
