How to estimate sucrose quantity from sugar cane juice?

From among all reducing sugars, how can I calculate the quantity of sucrose? Is there any particular method for the estimation of sucrose? After incubation of sugarcane juice for 24 hrs, sucrose is converted into dextran and gets reduced. How one can quantify the quantity of sucrose at every stage of process?

    i am not sure but you can go through Cole's method for sugar estimation. attachment may be useful to you.

    by hdrolyzing it using hydrochloric acid then estimatin the resultant monosaccharide using Benedict's quantitative or DNS method and you should first estimate reducing sugar in sample because in addition to sucrose there is also glucose in cane then substract the concentrtion of total reducing after hydrolysis from concentration of reducing before hydrolysis you will get the concentration of reducing result from sucrose hydrolysis then multiply in Moris factor (0.95) to get concentration of sucrose

    Estimate the reducing sugar by DNS method and also do estimation of total sugars by anthrone method the difference will give sucrose content in sugar cane.

    You can use HPLC for the analysis. You will need RI detector. Also YSI sugar analyser is an instrument which provide direct quantification of reducing sugars. This works on enzyme immobilized membranes.
